Vegan Banana Bread

Banana bread has a fascinating history that dates back to the 1930s when resourceful home cooks were looking for ways to use overripe bananas instead of wasting them. The Great Depression saw the rise of banana bread in American households as a thrifty and delicious way to make use of the fruit. Initially called banana cake, this quick bread became popular during World War II when ingredients like sugar and fats were rationed. Over the years, various adaptations and variations of banana bread emerged, incorporating nuts and chocolate chips. This is great for vegan baking because it doesn’t need eggs but it’s so moist and delicious anyway!

Banana bread, a beloved classic treat, offers more than just its comforting taste; it also boasts various health benefits. Made with ripe bananas, this moist bread is rich in potassium, which is essential for regulating blood pressure and supporting heart health. The addition of oat flour provides fiber that aids in digestion and helps you feel full longer. Moreover, substituting traditional ingredients with plant-based alternatives like flax eggs or almond milk in vegan banana bread can reduce cholesterol and saturated fat intake, promoting overall heart health. Indulging in a slice of homemade banana bread can not only satisfy your sweet cravings but also contribute to your well-being.

For this recipe you will need the following ingredients:

4 very ripe bananas

1/2 C white sugar

1/4 C brown sugar

1/4 C of oil

1 Tablespoon of vanilla

1 C all purpose flour

1 C oat flour

1 teaspoon of baking soda

1 Tablespoon of cinnamon

1 teaspoon of allspice [This is optional. you can use more cinnamon instead]

Mash the bananas in a large bowl. You can use a fork or potato masher to accomplish this. Make sure you get all of the lumps out because they won’t look very appetizing once the bread is done cooking.

Mix in all of the rest of the ingredients just until everything is incorporated. This is one of those recipes where you don’t want to over mix the batter. Pour the batter in a loaf pan that has been greased and floured.

Bake at 350 degrees Fahrenheit for about one hour. you will know it is done when a skewer, butter knife or chop stick stuck into the center is clean when you pull it out. If it has batter on it, let it cook longer.
