Vegan Pineapple Fried Rice

Pineapple fried rice is a delightful and popular dish that perfectly blends sweet and savory flavors. This Thai-inspired dish typically includes cooked rice stir-fried with chunks of juicy pineapple, vegetables like bell peppers, peas, and carrots, as well as a medley of seasonings such as soy sauce, curry powder, and garlic. The addition of cashews or peanuts provides a satisfying crunch, while fresh herbs like cilantro add a burst of freshness. Pineapple fried rice is a versatile dish that can be enjoyed on its own or as a side to accompany other main courses. Its vibrant colors and complex flavors make it a favorite choice for those seeking a well-rounded and satisfying meal.This is my version of pineapple fried rice. You can customize it to your liking. Add vegan chicken or your favorite nuts. Finish it with green onion and some sriracha. It’s totally up to you.

Pineapple is a tropical fruit known for its delicious taste and numerous health benefits. For this recipe you will need the following ingredients:

  • 1 Tablespoon of oil

  • 1/4 Cup of finely diced onion

  • 1 Tablespoon of minced garlic

  • 1 Cup of diced green pepper

  • 1 Cup of frozen vegetables [I used peas and carrots]

  • 1 8oz. can of sliced water chestnuts

  • 4 Cups of day old cooked rice

  • 1 20oz. can of pineapple chunks

  • 3/4 Cup of pineapple juice [save the juice from the can of pineapple]

  • 1 Tablespoon of sugar

  • 3 Tablespoons of soy sauce

  • 1 teaspoon of curry powder

  • 1/2 teaspoon of bullion paste

  • 1 teaspoon of sambal oelek

  • drizzle of sesame oil [optional]

  • 1/2 teaspoon of onion powder

  • 1/2 teaspoon of garlic powder

  • 1/2 teaspoon of ginger

  • the juice of half a lime [about 1-2 Tablespoons]

Saute the onion in the oil until they become translucent. Add the garlic and green pepper and cook until the green peppers become soft. Now add the frozen vegetables, rice, water chestnuts, and pineapple. Stir everything and break up the rice chunks. Now put the remaining ingredients into a bowl and whisk them together. Taste the mixture and decide if it needs more of something like the sugar, some salt, or maybe more chili paste.

Add the sauce to the pan and stir gently until everything is uniformly coated and heated through. You can serve it in a bowl or if you’re feeling ambitious you could cut a pineapple in half lengthwise and scoop out the pineapple fruit. You can then use the outer pineapple shell as your serving dish!
