Vegan Lo Mein

This is yet another idea of how to use pasta. Remember you can always increase the protein content of your meals by choosing a high protein pasta. I’m sure there is an official type of noodle that is meant to be used for lo mein but I’m a big fan of using what you have, what’s available to you and what you can afford. I think most people have spaghetti available to them so I thought it would be nice to have some spaghetti noodle recipe options.

I always loved the beef lo mein I would get at Chinese restaurants, but I have not encountered vegan beef lo mein in my city. I didn’t include the use of vegan mock meats in this recipe but you could easily add something like Beyond Beef Steak pieces or vegan ground beef. If you want to add vegan beef to this recipe I would recommend that you add it in when you saute the peppers.

I also really like this recipe because it comes together so quickly. When I’m hungry and/or tired and I don’t have energy to be in the kitchen cooking for an hour, I’m grateful to have recipes like this in my arsenal. It literally takes only the amount of time it takes to cook the noodles and then you have a delicious hot meal!

Recipe ingredients:

  • 1/2 of a 16oz package of spaghetti cooked according to the package directions

  • a handful of bell pepper strips

  • 1 Tablespoon of cooking oil

  • a handful of greens [I used kale and broccoli strips, you could use a little shredded carrot or whatever you like]

  • 1/2 cup soy sauce

  • 1/4 cup water

  • 2 teaspoons of sugar

  • 2 teaspoons of sesame oil

  • 1 teaspoon of garlic powder [or more if you like]

    Make the sauce while the noodles are cooking. Put the soy sauce, water, sugar, sesame oil and garlic powder on a bowl and whisk until the sugar has melted completely. this takes about a minute. Set it aside until later.

    Saute the bell pepper strips in a frying pan with the cooking oil until they become tender. Add the handful of greens you have chosen and saute them until the wilt. Add the cooked spaghetti noodles and sauce mixture to the pan and toss everything together until it is uniformly coated and heated through. Taste a noodle or two to see if you want to add more soy sauce etc.

    place your noodles in a dish and garnish them with sesame seeds and green onions if you want to.

    This is a recipe that would be good as egg roll filling. Whenever I have leftovers and I don’t want to keep eating it as it is I roll it up into a vegan friendly egg roll wrapper and enjoy it that way.

    This is a recipe that is good for meal prep because it is a good side dish to many different foods and it can be frozen and easily reheated in the microwave.
