Vegan Peanut Butter Cookie Recipe Redo

This is a recipe from the downloadable book which is missing the peanut butter measurement. Sorry about that.

Ingredients:

  • 3/4 cup of brown sugar

  • 1/4 cup of granulated sugar

  • 1 cup of peanut butter

  • 1 stick of vegan friendly butter substitute

  • replacement for 1 egg [recipe for egg replacer is in the downloadable book]

  • 1 teaspoon of vanilla

  • 1 1/4 cups flour

  • 3/4 teaspoon of baking soda

  • 1/2 teaspoon of baking powder

  • pinch of salt

    In a mixing bowl cream together the sugars, butter, vanilla and egg substitute. Once those are well combined you can add in the remaining ingredients. let the dough rest in the fridge for 1/2 an hour then form the dough into balls and press them with a fork that has been dipped in sugar to form cross hatch marks.

    Bake at 350 degrees Fahrenheit for about 12 minutes, less if you like them on the softer side.
