Vegan Oven Fried Potatoes
Potatoes are an amazing food. They are versatile and nutritious. They provide essential vitamins, minerals, and dietary fiber. A medium-sized potato contains about 100 calories and is a good source of vitamin C, B vitamins and also potassium. Potatoes are also fat-free until you add oil and fat to them as I am going to do. They are cholesterol-free, and low in sodium. With the skin on, potatoes offer even more fiber and nutrients. I almost always leave the skin on. Potatoes can be part of a weight loss journey however this recipe has a lot of oil.
Potatoes are still fairly inexpensive. I bought a 5 pound bag for under 5 dollars. I think that’s pretty affordable.
I make this particular potato recipe quite often because it’s quick to put together and you just walk away for almost an hour and come back to potatoes that are crispy on one side and still soft and tender on the other side. Serve it with your favorite dip for French fries and your munchies are sorted!
For this recipe you will need the following ingredients:
3 or 4 medium potatoes
1/4 cup of oil[you can use a lot less as the potatoes only need a light coating]
spices[I used 1 tsp salt, 1/2 tsp cracked black pepper, 2 tsp garlic powder, 2 tsp onion powder, 2 tsp smoked paprika] you can use whatever spices you want. You could just sprinkle some seasoning salt if you want.
aluminum foil or another baking tray to cover the baking tray you are cooking the potatoes on
Slice the potatoes so the pieces are circles each about 1/4 inch thick. The thickness isn’t really important but it will mean that if they are thicker they will take a little longer to cook.
Put your potato pieces in a bowl and dump in the oil and spices. Toss until all pieces are coated evenly.
Spread the potato pieces out on a baking tray. Try to get them in a single layer because the flat sides touching the pan will get crispy as the top side not touching the pan will cook but stay soft.
Cover the baking tray of beautiful potatoes and bake at 400 degrees Fahrenheit for approximately 50 minutes. Everyone will have a different experience based on their oven type so check them after 30 minutes. When the bottoms are crispy they are done. The foil or other baking tray covering the potatoes will insure that even if it takes a longer for the bottoms to get crispy, the tops of the pieces will stay soft.
Once they are done to your liking, you can serve them with whatever you like to dip French fries in. I like to mix Polynesian style sauce with Chinese chili crisp.
