Vegan Chicken and Waffles
Chicken and waffles is a dish with a complex and debated history. While it is commonly associated with Southern cuisine in the United States, its precise origins remain murky. I chose to make this as a sort of breakfast sandwich, something that you can put together really quickly in the morning, but you can get really upscale with it if you want to. You can make the vegan chicken from scratch or purchase frozen vegan chicken. There are so many varieties of vegan chicken available now. If you have a waffle maker, or better yet, a Belgian waffle maker, You can make any number of fancy waffles of different varieties. You can really go all out with chicken and waffles! Like I said, this recipe is very simple and uses ready made store bought ingredients so it is delicious but maybe not something I would consider a special occasion.
For this chicken and waffles recipe you will need the following ingredients:
2 vegan friendly waffles [no egg or dairy in the ingredients]
2 pieces of cooked vegan bacon
A piece of vegan chicken [you can make the one in the Crispy Fried Chicken recipe or use any frozen chicken patty]
2 Tablespoons of sriracha
2 Tablespoons of maple syrup
Prepare your chicken according to it’s directions. Cook the vegan bacon according to it’s directions. Toast your waffles.
Whisk together the sriracha and maple syrup in a small bowl.
Now you are ready to assemble the sandwich.
Place your chicken on a waffle and drizzle the sriracha maple syrup over it. Use as much or as little as you like. Top it with the bacon and the other waffle.
I don’t always want to mix savory and sweet so sometimes I prefer to have a savory or plain waffle with the fried chicken ad instead of syrup I would use a country gravy, but that might be controversial, I’m not sure. Either way you choose to make it it’s going to be good!
