Vegan Spicy Hummus Flatbread

This is such a delicious way to get some raw veggies into your diet. Sometimes I get bored of salads even though I put a lot of fun ingredients in my salads. I like a lot of carbs with my veggies and these flat breads/Naan breads are perfect for this! A lot of naan has milk in the ingredients so be sure to read the packaging. The Trader Joe’s flat breads do not have milk but the trader joe’s naan breads do if that gives you an idea of how much the ingredients can vary on such similar products.. You can of course buy hummus at most grocery stores but I always make my own hummus. I have used canned chickpeas but I have found that cooking my own from dry chickpeas/garbanzo beans is much better. the final result is more smooth and the flavor is lighter and more fresh.

I’m sure you can find a really great blog post giving instructions on how to cook dry chickpeas but I have an instant pot and that’s the only way I cook beans of any kind. I put a layer of dry chickpeas in the bottom of the instant pot and sift through them to be sure there aren’t any stones or debris in them. next you’ll want to rinse them thoroughly. Add enough water into the pot so that if you put your index finger on one of the beans the water will come up just past the first knuckle.

There is a blog post on this blog with ingredients I typically use for hummus but as you probably know there are many ways to make hummus so use the recipe you like the most.

Recipe Ingredients:

  • Vegan friendly flatbread [I used Trader Joe’s garlic flatbread but you can use anything including tortillas or sourdough bread]

  • Vegan friendly hummus [watch out for milk ingredients]

  • 2 teaspoons of Polynesian sauce

  • 1 teaspoon of hot sauce [I used Chinese chili oil]

  • 1 1/2 cups of chopped fresh vegetables of your choice [I used 1 Persian cucumber and 3 small sweet peppers]

    seasonings of your choosing to toss the fresh veg in [I used Trader Joe’s onion salt, black pepper and garlic powder]



    The first thing to do is mix up the hummus. In a medium size bowl put together the hummus you chose, Polynesian style sauce and hot sauce if you like spice. Leave out the hot sauce if you don’t. Set that aside for later.

Next chop your vegetables how you want them to be. I like the cucumbers to be very small cubes but if you like them cut into thin circles then do that. I also really like my peppers cut into these circles but again do feels right for you. Put you chopped veggies in a bowl that’s large enough for you to toss them in the spices. Sprinkle the seasonings I suggested or the ones of your choosing on chopped veggies and give them a toss to evenly distribute the seasonings. Now set the bowl aside and work on the flatbread.

Toast your bread. I put my flatbread on a ventilated pizza tray and baked it in the oven at 400 degrees for about 5 minutes. Toast yours until it is the amount of toasted you like

When the bread is toasted to your liking put it on a plate and spread some of the hummus on it. It’s totally up to you how much. I put a good half cup or more on mine. Add the veg on top and you’re ready to serve!

This whole process takes about ten to fifteen minutes. It’s quick and delicious and satisfies both your hunger and your tastebuds!
