Peppered Tofu

This tofu dish is very customizable. You can add heat by adding hot peppers or red pepper flakes. If the texture of this tofu is too soft for your taste you can use the baked tofu from the baked tofu recipe in this blog, just cut it into smaller pieces before tossing it into the pan.

You can serve it over rice. Remember if the tofu is too soft for your liking start with the already marinated and baked tofu instead of using uncooked tofu. If you are doing that skip the marinating portion of this recipe and just add the baked tofu pieces, marinade etc straight to the pan after the veggies are done cooking. You may also want to reduce the amount of marinade you use to 1/2 cup since the tofu pieces will have already been marinated.

If you don’t want to bother making your own marinade, you can use a store bought one. I have recently tried the Japanese bar b cue sauce that everyone is using lately. You could use that as your marinade. I find it to be a little too salty for my liking but I tend to go super easy on salt because too much salt messes with my blood pressure, but you do what works for you and tastes good.

This is another recipe that works for meal prep because it freezes well and reheats just fine in the microwave. This tofu dish is great served over rice, quinoa, any grain blend or even over mashed potatoes. It’s also good to add to different soups especially, in my opinion, ramen! It brings more substance to things like tomato soup. Another way to bulk up this recipe is to add it to pasta that you cooked in broth instead of plain water.

Recipe Ingredients:

  • 1 block of tofu [frozen and thawed]

  • 1 medium onion chopped into small pieces

  • 1 cup of diced sweet or bell peppers

  • 1 cup of green beans

  • 4 tablespoons of oil

  • 2/3 cup of marinade from the baked tofu blog

  • 1/2 tablespoon of black pepper

  • salt and pepper to taste

    Cut the tofu into approximately 1/2” cubes and gently squeeze out the excess water. Place them into a storage container with a lid or a large storage bag along with the marinade. Turn them around every few minutes to be sure they get evenly marinated.

    While the tofu is marinating saute the onion in 2 tablespoons of the oil until they are soft then add the peppers and green beans. Saute those until they are soft.

    Add the remaining 2 tablespoons of oil to the pan with the tofu, marinade and black pepper. Saute over medium heat for about 15 minutes. Stir the pieces around gently every few minutes. You are looking for the sauce to absorb and the pieces to begin to caramelize. When you see the tofu pieces turning darker brown and getting some crispy edges it is done. Give it a taste to see if you want to add more salt or pepper.
